I actually adapted this recipe from a cookbook that I “borrowed” from my mom about 25 years ago…don’t tell her! The original recipe was written by Mrs. Jill Kneeter in 1972! I’ve been making this for my family for 20 years. You can assemble the meatloaf up until the cooking stage and keep it in the refrigerator for a day or two until you’re ready to pop it in the oven. This is also one of my go-to recipes when I’m taking a meal to a sick family-just make it in a disposable baking tin, add a salad, veggies and a side and some cookies for a full meal.
